As it says on the tin. The unsmelted ore of the new gems (sapphire, emerald, citrine, etc.) look exactly the same in the cart as the smelted version does in the inventory. All other items, even the moonstone shard and fluorescent ore, have a different ore-ish unsmelted variant for the cart, and another image for the smelted final product.
Edit to add: now that this has been moved to the suggestions forum, I have to say I don't necessarily feel very strongly about this, although for consistency's sake, I do think the site would benefit from having items (such as the gems) visually differ from their raw ore product.
