I would like to do the hunts above level 5 but seem to get only the low levels. I'm at level 29 - almost 30. Is there a method to get them or is it all just random?

@Moonlitfox it is random and the higher level ones are quite a bit rarer; there is less of them and they don't show up as often as the low level ones. But at lv29 you should've at least unlocked the lv10 and lv25 hunts automatically. You can try rerolling for a pebble fee, waiting for a new day (the recent patch notes say they fixed the bug where a new day didn't give a new set of hunts like it was supposed to), or you can do the low level hunts and hope that upon completing them a higher level hunt finally shows up
