What are Trinkets for???

I have been playing for a couple hours now and I'm confused as to what their function is. Should I just sell them from my inventory? Should I hoard them to make other things like in Flight Rising?

It depends on the trinket! Some of them have uses.

As far as I know, these trinkets have uses-

Common Hunting Trophy (this is used a lot in the hunting profession, so keeping large amounts of this one is good)
Fire Opal
Blue Agate
Moonlight Rose
Nomad's Luck
Liontail Nytha Spines
Both dragon plushies

Also the music boxes do have a use, but they are one use, so once you apply one to your account, you can just sell the rest.

I would suggest saving some because they could end up having a use, the fire opals only somewhat recently got a use so it could easily happen to the others. That being said, it won't hurt to sell some, especially since it's not hard to accumulate large amounts of some of the items.

@broken you can either sell them on the Flea Market or on the forums to other players. Although if they don't have any use, I doubt there'd be many buyers. Another option is to sell straight from the inventory. When you arein your inventory there's a button in the top right area of the page saying 'sell to vendor'. If you click that you'll be able to check the boxes for items you want to sell and select their quantities. Sadly the maximum amount is currently set to 100, so I personally never bother with it. *weeps in 100k candles*

PS. edit to add: the price you sell them for when vendor-selling, is the value listed in the tooltip. It's generally a relatively low value, but if you can accrue large amounts, it'll add up over time.
