Does battling have a chance of dropping the enemy as a companion or can I only get them via shops?

Unfortunately no, companions cannot drop via exploring. You can get them as rewards when you complete each of the Campaign storylines, but otherwise you only buy them from the Mole Market or Flea Market.

What are candles used for? I can't find any recipes currently using them as a material. Thanks in advance!

You can use the White Candlesticks to craft Jack-O-Lanterns. They're apparel/decor. ^_^

Are the new profession encounters in darkspine and goldsea actually implemented? I gr the fishing one in icerun 1 fairly often so I was anticipating a similar encounter rate, but I'm 35+ in crafting and farming and I've been running goldsea 3 and not run into either thus far. I've not gotten any in goldsea 1 either.

Hello. When I campaign now, it says my quest log is empty for every area on the map. Now I just battle the bosses in each area. Have I gotten as far as possible and have to wait for new quests to be added?

@Wolfster - if you have no quests left in each pack area at all, then yep you've done everything possible for now. more will be added though, if you refer to the Development Roadmap. ^^
